If you like raspberries, cream cheese and whipped topping then this pie is for you. It is so fluffy and creamy at the same time. You can change up the fruit if you don’t like or have raspberries. I’m going to try blueberries soon and apple for Fall.
Here is the ingredients:
1/2 c raspberries
12 ouces cream cheese softened
3/4 c confectioners sugar
2 c whipped topping (homemade or boughten
graham cracker crust
3 T cornstarch
1 c sugar
I bought a graham cracker crust. But you could make your own. And I use a store made whipped topping, but again you can make your own. I was just about simplicity this day.
First combine the cream cheese and confectioners sugar and vanilla. Mix until creamy. Then add your whipped topping, mix until a fluffy mixture. Now taste test if want too. I definitely do, it’s so good!
Now fold in a 1/2 c of your berries. Be gentle to retain some of the berries shape.
Then add to your crust.
Now start on your topping. Combine raspberries, water, cornstarch and sugar to a saucepan on medium heat. Cook until combined and thickened. Stirring gently. Let cool completely.
After your topping is cooled add to the top of your whole pie or drizzle on as you serve it.
